- 1 cup white chocolate chips
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 15 Golden Oreo cookies, crushed
- 1 (3 oz) box strawberry-flavored gelatin mix OR 1/2 cup freeze-dried strawberries, crushed into powder
- 3 tbsp unsalted butter, melted
Instructions
- In a microwave-safe bowl, melt white chocolate chips in 30-second intervals, stirring until smooth. Let cool slightly.
- In a separate bowl, beat softened cream cheese, powdered sugar, and vanilla extract until creamy.
- Stir in the melted white chocolate until fully combined. Cover and refrigerate for 1 hour or until firm enough to scoop.
- Use a small cookie scoop to form 1-inch balls. Roll between your palms to smooth. Place truffles on a parchment-lined baking sheet and freeze for 20 minutes.
- In a food processor, pulse Golden Oreos into crumbs. Add strawberry gelatin mix (or freeze-dried strawberry powder) and melted butter. Pulse until crumbly and coated.
- Spread mixture on a baking sheet and let dry for 10 minutes.
- Roll chilled cheesecake balls in the strawberry crumb mixture, pressing gently to coat evenly.
- For an extra crunch, chill for 15 minutes and roll again in the crumb coating.
- Enjoy immediately or refrigerate in an airtight container for up to 5 days. These truffles also freeze well for up to 2 months.
