Description

These no-bake strawberry cheesecake truffles are creamy, bite-sized desserts with a rich cheesecake center and a nostalgic strawberry crunch coating. Perfect for parties, gifts, or an easy make-ahead treat.


Ingredients

  • 1 (8 oz) block cream cheese, softened
  • 1 cup white chocolate chips
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 15 Golden Oreo cookies, crushed
  • 1 (3 oz) box strawberry-flavored gelatin mix OR 1/2 cup freeze-dried strawberries, crushed into powder
  • 3 tbsp unsalted butter, melted

Instructions

  1. In a microwave-safe bowl, melt white chocolate chips in 30-second intervals, stirring until smooth. Let cool slightly.
  2. In a separate bowl, beat softened cream cheese, powdered sugar, and vanilla extract until creamy.
  3. Stir in the melted white chocolate until fully combined. Cover and refrigerate for 1 hour or until firm enough to scoop.
  4. Use a small cookie scoop to form 1-inch balls. Roll between your palms to smooth. Place truffles on a parchment-lined baking sheet and freeze for 20 minutes.
  5. In a food processor, pulse Golden Oreos into crumbs. Add strawberry gelatin mix (or freeze-dried strawberry powder) and melted butter. Pulse until crumbly and coated.
  6. Spread mixture on a baking sheet and let dry for 10 minutes.
  7. Roll chilled cheesecake balls in the strawberry crumb mixture, pressing gently to coat evenly.
  8. For an extra crunch, chill for 15 minutes and roll again in the crumb coating.
  9. Enjoy immediately or refrigerate in an airtight container for up to 5 days. These truffles also freeze well for up to 2 months.
