Description

This homemade hamburger steak and gravy recipe creates juicy, pan-fried beef patties smothered in rich brown onion gravy. A comforting Southern-inspired dinner that’s easy to make, hearty, and full of flavor — perfect for weeknights or family gatherings.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 ½ lbs ground beef (85% lean)
  • 4 tablespoons frozen butter, shredded
  • ½ cup yellow onion, very finely minced
  • 2 teaspoons yellow mustard
  • 3 teaspoons Worcestershire sauce
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • 2 yellow onions, sliced into ¾-inch rings
  • 3 tablespoons cold unsalted butter, divided
  • 1 cup chicken broth
  • 1 cup beef broth
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 ½ teaspoons Worcestershire sauce (for gravy)
  • ¼ cup cold water + 3 tablespoons cornstarch
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large mixing bowl, combine ground beef, minced onions, shredded frozen butter, garlic, Worcestershire sauce, and mustard. Gently mix until just combined — avoid overmixing to keep patties tender.
  2. Shape the mixture into evenly sized oval hamburger steaks. Refrigerate for about 15 minutes to firm up the texture.
  3. Heat olive oil in a large skillet over medium-high heat. Season patties with salt and pepper, then sear each side for 2–3 minutes until browned. Remove and set aside.
  4. Reduce the heat to medium-low. Melt 2 tablespoons of butter in the same skillet and add the sliced onions. Cook for 15–20 minutes, stirring occasionally, until onions are soft and caramelized.
  5. Add chicken broth, beef broth, onion powder, garlic powder, and Worcestershire sauce. Stir to scrape up the flavorful browned bits from the bottom of the pan.
  6. Whisk together cold water and cornstarch in a small bowl until smooth. Bring the gravy to a boil, then slowly whisk in the cornstarch mixture until thickened. Lower heat to a gentle simmer.
  7. Return the browned patties to the skillet and spoon the onion gravy over them. Cover and simmer for about 10 minutes, or until cooked through and tender (internal temperature 160°F).
  8. Stir in the remaining tablespoon of cold butter at the end for a rich, velvety finish. Garnish with fresh parsley and serve hot with mashed potatoes, rice, or vegetables.

Notes

  • Use 85% lean beef for the perfect balance of flavor and juiciness.
  • Shredding frozen butter into the beef mixture keeps the patties moist while cooking.
  • Caramelize onions slowly over low heat for deeper flavor.
  • Adjust gravy thickness by adding more cornstarch slurry if needed.
  • Serve with mashed potatoes or rice to soak up the delicious gravy.
  • Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
