Instructions
- In a large mixing bowl, combine ground beef, minced onions, shredded frozen butter, garlic, Worcestershire sauce, and mustard. Gently mix until just combined — avoid overmixing to keep patties tender.
- Shape the mixture into evenly sized oval hamburger steaks. Refrigerate for about 15 minutes to firm up the texture.
- Heat olive oil in a large skillet over medium-high heat. Season patties with salt and pepper, then sear each side for 2–3 minutes until browned. Remove and set aside.
- Reduce the heat to medium-low. Melt 2 tablespoons of butter in the same skillet and add the sliced onions. Cook for 15–20 minutes, stirring occasionally, until onions are soft and caramelized.
- Add chicken broth, beef broth, onion powder, garlic powder, and Worcestershire sauce. Stir to scrape up the flavorful browned bits from the bottom of the pan.
- Whisk together cold water and cornstarch in a small bowl until smooth. Bring the gravy to a boil, then slowly whisk in the cornstarch mixture until thickened. Lower heat to a gentle simmer.
- Return the browned patties to the skillet and spoon the onion gravy over them. Cover and simmer for about 10 minutes, or until cooked through and tender (internal temperature 160°F).
- Stir in the remaining tablespoon of cold butter at the end for a rich, velvety finish. Garnish with fresh parsley and serve hot with mashed potatoes, rice, or vegetables.
