Description

  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 2 eggs
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 yellow onion, finely chopped
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F and prepare a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a large bowl, combine ground chicken, Parmesan cheese, panko, eggs, minced garlic, and garlic powder. Mix gently by hand.
  3. Add onion, Italian seasoning, salt, and pepper. Mix until just combined — don’t overmix.
  4. Shape the mixture into a 9×4 inch loaf on a baking sheet or press into a loaf pan.
  5. Drizzle the top with olive oil and smooth the surface for an even, golden crust.
  6. Bake for 45–50 minutes, or until internal temperature reaches 165°F.
  7. Let the meatloaf rest for 10 minutes before slicing to retain moisture.
  8. Slice, serve warm, and garnish with extra Parmesan if desired.
