- 1 pound ground chicken
- 1 cup freshly grated Parmesan cheese
- 1 cup panko breadcrumbs
- 2 eggs
- 4 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 yellow onion, finely chopped
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoons olive oil
Instructions
- Preheat oven to 375°F and prepare a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, combine ground chicken, Parmesan cheese, panko, eggs, minced garlic, and garlic powder. Mix gently by hand.
- Add onion, Italian seasoning, salt, and pepper. Mix until just combined — don’t overmix.
- Shape the mixture into a 9×4 inch loaf on a baking sheet or press into a loaf pan.
- Drizzle the top with olive oil and smooth the surface for an even, golden crust.
- Bake for 45–50 minutes, or until internal temperature reaches 165°F.
- Let the meatloaf rest for 10 minutes before slicing to retain moisture.
- Slice, serve warm, and garnish with extra Parmesan if desired.
