Description

Unicorn Poop Cheesecake Cookies are vibrant, rainbow-colored sugar cookies stuffed with a creamy cheesecake filling. Fun, easy, and perfect for parties, birthdays, and magical dessert lovers.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 2½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • Gel food coloring (pink, purple, blue, yellow)
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • Rainbow sprinkles
  • Optional: edible glitter

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream butter and sugar until light and fluffy. Add egg and vanilla extract, beat again.
  3. In a separate bowl, whisk flour, baking powder, and salt. Gradually add to wet mixture and combine to form dough.
  4. Divide dough into four portions. Add food coloring to each portion and mix until colors are evenly distributed.
  5. In another bowl, mix cream cheese and powdered sugar until smooth. Chill filling for 10–15 minutes.
  6. Take small pieces of each colored dough, swirl together, flatten slightly, and place a dollop of filling in the center.
  7. Seal the filling by wrapping dough around it. Roll into balls and place on the baking sheet.
  8. Flatten slightly and bake for 10–12 minutes or until edges are lightly golden.
  9. Cool on the sheet for 5 minutes, then transfer to a wire rack. Top with sprinkles or edible glitter while still warm.

Notes

  • Use gel food coloring for brighter colors without thinning the dough.
  • Freeze cheesecake filling for easier handling.
  • Don’t overbake; cookies should be soft in the center.
  • Store baked cookies in an airtight container for up to 1 week.
  • You can freeze unbaked, stuffed cookie dough balls for up to 2 months.
