It’s a must-try for anyone looking for a filling, delicious, and easy-to-make meal.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced into rounds
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked black-eyed peas (or canned, rinsed and drained)
  • 2 cups fresh collard greens, stems removed and chopped
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional for heat)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 teaspoon apple cider vinegar (optional for brightness)

Instructions

Step 1: Cook the Sausage

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sliced smoked sausage and cook for 4-5 minutes, or until browned on both sides. Remove and set aside.

Step 2: Sauté the Onion and Garlic

In the same pot, add the diced onion and sauté for about 3-4 minutes until it becomes translucent. Then, add the minced garlic and cook for an additional minute to release its fragrant oils.

Step 3: Add Broth and Black-Eyed Peas

Pour in the chicken broth and stir well, scraping up any browned bits from the bottom of the pot. Add the black-eyed peas, collard greens, smoked paprika, cayenne pepper, salt, and black pepper. Stir everything together to combine.

Step 4: Simmer

Bring the mixture to a gentle boil. Once boiling, reduce the heat to low and let it simmer for 20 minutes or until the collard greens are tender and the flavors have melded together.

Step 5: Finish with Sausage and Vinegar

Stir in the apple cider vinegar (if using) for a touch of brightness. Return the cooked sausage to the pot and let it simmer for another 5 minutes. Your Southern Soul Food Bean and Sausage Soup is now ready!

Notes

  • Use fresh collard greens: For the best flavor, opt for fresh collard greens instead of frozen.
  • Adjust the heat: If you prefer a spicier soup, add more cayenne pepper or include a dash of hot sauce.
  • Smoked sausage variety: You can experiment with different types of smoked sausages like kielbasa or andouille for varied flavors.
  • Substitute with other greens: If collard greens aren’t available, you can use spinach, kale, or mustard greens as alternatives.
