- 1 egg white (for egg wash)

Instructions
- In a large bowl, combine warm water and sugar. Sprinkle yeast over the top and let sit for 5–10 minutes until foamy.
- Add flour, salt, and oil. Mix until a dough forms. Knead by hand or with a dough hook for 8–10 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm area for about 1 hour or until doubled in size.
- Punch down the dough and divide into 8 equal portions. Roll each into a ball and use a Kaiser stamp or knife to shape the tops.
- Place the rolls on a parchment-lined baking sheet. Cover and let rise again for 30 minutes.
- Preheat oven to 425°F (220°C). Brush each roll with egg white and sprinkle with sesame or poppy seeds if desired.
- Bake for 15–18 minutes, or until golden brown and hollow-sounding when tapped on the bottom.
- Transfer to a wire rack and allow to cool before serving.
