Ingredients
For the Chicken:
- 1 ½ lbs boneless, skinless chicken thighs (cut into bite-sized pieces)
- 2 tablespoons cornstarch (for crispy texture)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons vegetable oil
For the Vegetables:
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup shredded purple cabbage
- 1 carrot, julienned
- 3 green onions, chopped
For the Honey Garlic Sauce:
- ¼ cup soy sauce (or low-sodium soy sauce)
- 3 tablespoons honey (or maple syrup)
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch mixed with 2 tablespoons water
For Garnish:
- 1 tablespoon sesame seeds
- 2 tablespoons chopped fresh cilantro
Instructions
Step 1: Prepare the Chicken
- Toss the chicken pieces with cornstarch, salt, and pepper. This creates a crispy texture when stir-fried.
Step 2: Cook the Chicken
- Heat 1 tablespoon oil in a wok or skillet over medium-high heat.
- Add the chicken and stir-fry for 6-7 minutes until golden brown. Remove and set aside.
Step 3: Stir-Fry the Vegetables
- In the same pan, add remaining oil and sauté bell peppers, cabbage, and carrots for 3-4 minutes.
Step 4: Prepare the Sauce
- In a small bowl, whisk together soy sauce, honey, garlic, ginger, rice vinegar, and sesame oil.
Step 5: Combine Everything
- Add the cooked chicken back to the pan.
- Pour the honey garlic sauce over everything and stir well.
Step 6: Thicken the Sauce
- Stir in the cornstarch slurry and let simmer for 2 minutes, until thickened.
Step 7: Serve & Garnish
- Remove from heat and top with sesame seeds, green onions, and cilantro.
- Serve hot with steamed rice or noodles.
