  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 2 tablespoons vanilla extract
  • 2½ cups all-purpose flour
  • 1 tablespoon baking soda
  • ½ teaspoon salt
  • Filling (optional):
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 2 teaspoons thick cream

Instructions

  1. In a large bowl, cream together the butter, granulated sugar, and brown sugar until fluffy.
  2. Add peanut butter, eggs, and vanilla extract. Mix until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually stir the dry ingredients into the wet mixture until a firm dough forms.
  5. Roll dough into 1-inch balls and flatten slightly with a fork to create a crisscross pattern.
  6. Preheat air fryer to 350°F (175°C) and line the basket with parchment paper.
  7. Place cookies in a single layer in the basket. Air fry for 6–8 minutes or until edges are golden.
  8. Cool cookies completely before filling, if desired.
  9. To make the filling, mix peanut butter, powdered sugar, and cream until smooth.
  10. Spread filling on the flat side of one cookie, then top with another to form a sandwich. Repeat.
