Cheesy Baked Mexican Street Corn – Easy Elote Recipe

It doesn’t matter if you’re serving it up as an accompaniment to barbecue, tacos or even a family-friendly dinner this easy recipe for elote will delight your friends and family. Additionally baking it will make it very easy to prepare for cooking, and there’s no needing grills!


Ingredients

Main Ingredients:

  • four ears corn that is fresh with husks
  • 2 Tablespoons of butter that has been melted
  • 1/2 Cup mayonnaise ( Mexican crema can also be used!)
  • 1 teaspoon of garlic powder
  • Half teaspoon smokey spice paprika ( adds a deep smoky flavor!)
  • 1/2 teaspoon Chili powder ( or Tajin for added zing!)
  • 1/2 cup cotija cheese, crumbled (or queso fresco!)
  • 1/2 Cup mozzarella cheese Shreds ( for that gooey melt!)
  • Fresh cilantro 1/4 cup chopped
  • 1 lime, cut into wedges
  • Black pepper and salt to taste

Optional Toppings for Extra Flavor:

  • Hot sauce (Cholula, Valentina, or Tapatio)
  • Avocado crema for a creamy twist
  • Green onions that have been chopped to add crunch
  • Aioli of roasted garlic instead of mayonnaise

Instructions

Step 1: Preheat & Prep the Corn

  • Preheat your oven up to 375 degF (190degC).
  • Make sure you line the edges of a baking tray with parchment.
  • Place the husked corn on the baking sheet to be brushed with melting butter and then dust with salt and pepper.

Step 2: Bake the Corn

  • Bake at the temperature of 375 degrees at 20 minutes Turning the pan frequently.
  • The kernels will become soft and lightly golden.

Step 3: Prepare the Creamy Sauce

  • In a small container, mix:
    Mayonnaise (or crema)
    Spices like smoked paprika along with chili powder
    The squeeze of lime juice to get the tang

Step 4: Coat & Add Cheese

  • Remove cooked corn out of the oven.
  • Use a brush to coat thoroughly with the sauce that is creamy.
  • Sprinkle cotija & mozzarella cheese on top.

Step 5: Bake Again for the Perfect Melt

  • Go back to the oven, and cook the cake for further 10 mins.
  • The cheese must be sparkling, golden and delicious!

Step 6: Garnish & Serve

  • Add crushed cilantro.
  • Mix along with lime wedges to get an fresh kick!

Notes

For a more charred and flavor Broil the corn for 3 to 5 seconds immediately after it has been baked.
Do you want it to be more spicy? Add extra chili powder or drizzle it with hot sauce.
To get a more tangy taste Mix a small amount from citrus zest into the smooth sauce.
Combine with Mexican rice and grilled meats or tacos to make a full dinner!
