Description

Brown Butter Pistachio Cookie Bars are rich, chewy dessert bars made with nutty browned butter, brown sugar, honey, and chopped pistachios. They bake up with golden edges, a soft center, and a warm caramel-like flavor that makes them perfect for holidays, dessert trays, or an everyday sweet treat.

  • 10 tablespoons unsalted butter, melted until lightly browned
  • 1 cup packed light brown sugar
  • 3 1/2 tablespoons honey
  • 1 large egg
  • 1 large egg yolk
  • 1 1/4 teaspoons flaky sea salt, divided
  • 1 cup all-purpose flour
  • 1/4 cup shelled salted pistachios, roughly chopped

Instructions

  1. Preheat the oven to 325°F. Line an 8×8-inch baking pan with parchment paper and lightly spray the parchment and any exposed pan with nonstick spray.
  2. Place the butter in a small saucepan over medium-low heat and cook until completely melted and just beginning to brown. Do not let it get too dark.
  3. In a large bowl, whisk together the browned butter, brown sugar, and honey until smooth.
  4. Add the egg and egg yolk, then whisk until fully combined.
  5. Stir in 1 teaspoon of the flaky sea salt and the flour just until combined. Do not overmix.
  6. Spread the batter evenly into the prepared pan.
  7. Sprinkle the top with the remaining flaky sea salt and the chopped pistachios.
  8. Bake for 23 to 25 minutes, or until the edges are set, the top is golden, and the center is still slightly soft.
  9. Cool the bars in the pan for 10 minutes, then lift them out using the parchment and transfer to a wire rack to cool completely.
  10. Cut into small squares and serve.

Notes

  • Watch the butter closely while browning so it does not burn.
  • Do not overmix the batter or the bars may turn dense.
  • Do not overbake; the center should still look slightly soft when removed from the oven.
  • Let the bars cool completely before slicing for cleaner squares.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
  • These bars can be frozen for up to 2 months when wrapped well.
