- ¾ cup all-purpose flour
- ½ cup cornstarch (for extra crispiness)
- 1 large egg (room temperature)
- 1 tablespoon Sriracha (optional for extra heat)
- ½ teaspoon garlic powder

- ¼ teaspoon black pepper
- ⅛ teaspoon cayenne pepper (optional for more spice)
- 2 cups panko breadcrumbs (for extra crunch)

- ½ cup Thai sweet chili sauce
- 1 teaspoon Sriracha (adjust to spice preference)
- 2 tablespoons honey
Garnishes & Serving:
- Chopped parsley or green onions
- Lime wedges
- Side of steamed rice or crispy fries
Instructions
Step1: Prepare the Bang Bang Sauce
- In a small bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and honey.
- Taste and adjust spice level if needed. Set aside.
Step2: Prep the Chicken
- In a bowl, whisk together buttermilk, flour, cornstarch, egg, Sriracha, garlic powder, salt, pepper, and cayenne pepper.
- Add chicken tenders to the mixture, ensuring they are well coated.
- Place panko breadcrumbs on a separate plate.
Step3: Coat the Chicken
- Remove chicken pieces from the batter and let excess drip off.
- Coat each piece thoroughly in panko breadcrumbs, pressing slightly for adherence.
Step4: Fry the Chicken
- Heat about 1 inch of oil in a deep skillet over medium-high heat until it reaches 365°F (185°C).
- Fry chicken pieces in batches for 2-3 minutes per side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
Step5: Toss & Serve
- Toss the crispy chicken with the prepared Bang Bang Sauce or drizzle on top.
- Garnish with chopped parsley or green onions and serve hot!
Notes
For crispy, juicy Bang Bang Chicken, use panko breadcrumbs, double-coat for crunch, and marinate in buttermilk for tenderness. Keep oil at 365°F (185°C), drain on a wire rack, and toss in sauce just before serving. Air fry at 400°F (200°C) for 10 minutes for a healthier option. Reheat in an oven or air fryer to stay crispy. Serve with rice, green beans, or sweet potato fries!
