Ingredients

Scale

For the Chicken:

  • 1 ½ pounds boneless, skinless chicken tenderloins
  • 1 cup buttermilk (or substitute with 1 cup milk + 1 tbsp lemon juice)
  • ¾ cup all-purpose flour
  • ½ cup cornstarch (for extra crispiness)
  • 1 large egg (room temperature)
  • 1 tablespoon Sriracha (optional for extra heat)
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper (optional for more spice)
  • 2 cups panko breadcrumbs (for extra crunch)
  • Canola oil for frying

For the Bang Bang Sauce:

  • 1 cup mayonnaise
  • ½ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha (adjust to spice preference)
  • 2 tablespoons honey

Garnishes & Serving:

  • Chopped parsley or green onions
  • Lime wedges
  • Side of steamed rice or crispy fries

Instructions

Step1: Prepare the Bang Bang Sauce

  1. In a small bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and honey.
  2. Taste and adjust spice level if needed. Set aside.

Step2: Prep the Chicken

  1. In a bowl, whisk together buttermilk, flour, cornstarch, egg, Sriracha, garlic powder, salt, pepper, and cayenne pepper.
  2. Add chicken tenders to the mixture, ensuring they are well coated.
  3. Place panko breadcrumbs on a separate plate.

Step3: Coat the Chicken

  1. Remove chicken pieces from the batter and let excess drip off.
  2. Coat each piece thoroughly in panko breadcrumbs, pressing slightly for adherence.

Step4: Fry the Chicken

  1. Heat about 1 inch of oil in a deep skillet over medium-high heat until it reaches 365°F (185°C).
  2. Fry chicken pieces in batches for 2-3 minutes per side, or until golden brown and crispy.
  3. Transfer to a paper towel-lined plate to drain excess oil.

Step5: Toss & Serve

  1. Toss the crispy chicken with the prepared Bang Bang Sauce or drizzle on top.
  2. Garnish with chopped parsley or green onions and serve hot!

Notes

For crispy, juicy Bang Bang Chicken, use panko breadcrumbs, double-coat for crunch, and marinate in buttermilk for tenderness. Keep oil at 365°F (185°C), drain on a wire rack, and toss in sauce just before serving. Air fry at 400°F (200°C) for 10 minutes for a healthier option. Reheat in an oven or air fryer to stay crispy. Serve with rice, green beans, or sweet potato fries!
