Let’s dive into this easy-to-make, flavorful recipe that is sure to become a winter favorite!

Ingredients

Scale
  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons olive oil
  • 3 cups beef broth
  • 3 medium carrots, peeled and sliced
  • 2 medium potatoes, diced
  • 1 large onion, chopped
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Fresh parsley for garnish

Instructions

Step 1: Coat the Beef

Toss the beef cubes in flour, salt, and pepper until they are evenly coated. This will help create a flavorful crust on the beef when seared.

Step 2: Sear the Beef

Heat olive oil in a large skillet over medium-high heat. Sear the beef cubes on all sides until browned, which should take about 3-4 minutes per side. This step enhances the flavor of the beef by caramelizing the outside. Once browned, transfer the beef to your slow cooker.

Step 3: Sauté Aromatics

In the same skillet, add garlic and tomato paste. Cook for 1 minute, allowing the garlic to become fragrant and the tomato paste to darken slightly. This adds depth of flavor to your stew.

Step 4: Deglaze the Pan

Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. These bits are packed with flavor, so be sure to incorporate them into the stew. Transfer this mixture to the slow cooker.

Step 5: Add Vegetables and Seasonings

Add the carrots, potatoes, onion, celery, Worcestershire sauce, thyme, rosemary, and bay leaf to the slow cooker. Stir everything together to combine and ensure the flavors are evenly distributed.

Step 6: Slow Cook

Cover the slow cooker and cook on low for 8 hours or on high for 4 hours. The beef should be tender, and the vegetables will be fully cooked. Once done, remove the bay leaf before serving.

Notes

  • Beef Selection: For a tender and juicy stew, choose beef chuck. It’s affordable and ideal for slow cooking, as it becomes tender after long, slow cooking.
  • Vegetable Variations: Feel free to add other root vegetables like parsnips or turnips for extra flavor.
