Ingredients
Main Ingredients:
- 1 cup cornmeal (for a classic cornbread texture)
- 1 cup all-purpose flour (or a gluten-free alternative)
- ¼ cup granulated sugar (adjust to taste)
- 1 tablespoon baking powder (for a fluffy rise)
- ½ teaspoon salt (balances sweetness)
- 1 cup mashed sweet potatoes (adds moisture and natural sweetness)
- ½ cup milk (dairy or plant-based)
- ½ cup sour cream (or Greek yogurt)
- 2 large eggs (for structure and richness)
- ¼ cup unsalted butter, melted (for a buttery taste)
- ½ teaspoon ground cinnamon (optional, adds warmth)
- ¼ teaspoon ground nutmeg (optional, enhances flavor)
Optional Topping:
- 2 tablespoons melted butter
- 1 tablespoon honey (for a glossy, sweet finish)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Grease an 8×8-inch baking dish or a cast-iron skillet for the best results.
Step 2: Mix the Dry Ingredients
In a large mixing bowl, combine:
Cornmeal
Flour
Sugar
Baking powder
Salt
Step 3: Prepare the Wet Ingredients
In a separate bowl, whisk together:
Mashed sweet potatoes
Milk
Sour cream
Eggs
Melted butter
Cinnamon & nutmeg (if using)
Step 4: Combine & Bake
- Slowly pour the wet ingredients into the dry ingredients, stirring gently. Do not overmix—a few lumps are fine!
- Pour the batter into the prepared baking dish.
- Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Step 5: Add the Buttery Honey Glaze (Optional but highly recommended!)
- While the cornbread is still warm, brush the top with melted butter and honey.
- Let it sit for 10 minutes, then slice into bars.

Use roasted sweet potatoes – Baking them brings out their natural sweetness.
Don’t skip the sour cream – It ensures extra moisture and tenderness.
For extra buttery flavor, add an extra tablespoon of melted butter to the batter.
Want it sweeter? Increase the sugar to ½ cup or add maple syrup.
Make it spicy! Add a pinch of cayenne or smoked paprika for a kick.
