Ingredients

Scale

Main Ingredients:

  • 1 cup cornmeal (for a classic cornbread texture)
  • 1 cup all-purpose flour (or a gluten-free alternative)
  • ¼ cup granulated sugar (adjust to taste)
  • 1 tablespoon baking powder (for a fluffy rise)
  • ½ teaspoon salt (balances sweetness)
  • 1 cup mashed sweet potatoes (adds moisture and natural sweetness)
  • ½ cup milk (dairy or plant-based)
  • ½ cup sour cream (or Greek yogurt)
  • 2 large eggs (for structure and richness)
  • ¼ cup unsalted butter, melted (for a buttery taste)
  • ½ teaspoon ground cinnamon (optional, adds warmth)
  • ¼ teaspoon ground nutmeg (optional, enhances flavor)

Optional Topping:

  • 2 tablespoons melted butter
  • 1 tablespoon honey (for a glossy, sweet finish)

Instructions

Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). Grease an 8×8-inch baking dish or a cast-iron skillet for the best results.

Step 2: Mix the Dry Ingredients

In a large mixing bowl, combine:
Cornmeal
Flour
Sugar
Baking powder
Salt

Step 3: Prepare the Wet Ingredients

In a separate bowl, whisk together:
Mashed sweet potatoes
Milk
Sour cream
Eggs
Melted butter
Cinnamon & nutmeg (if using)

Step 4: Combine & Bake

  1. Slowly pour the wet ingredients into the dry ingredients, stirring gently. Do not overmix—a few lumps are fine!
  2. Pour the batter into the prepared baking dish.
  3. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Step 5: Add the Buttery Honey Glaze (Optional but highly recommended!)

  • While the cornbread is still warm, brush the top with melted butter and honey.
  • Let it sit for 10 minutes, then slice into bars.

Notes

Use roasted sweet potatoes – Baking them brings out their natural sweetness.
Don’t skip the sour cream – It ensures extra moisture and tenderness.
For extra buttery flavor, add an extra tablespoon of melted butter to the batter.
Want it sweeter? Increase the sugar to ½ cup or add maple syrup.
Make it spicy! Add a pinch of cayenne or smoked paprika for a kick.
