Ingredients
For the Cookies:
- ½ cup unsalted butter, softened.
- ½ cup granulated sugar.
- ½ cup brown sugar.
- 1 large egg.
- 1 tsp vanilla extract.
- 1 ¾ cups all-purpose flour.
- ½ tsp baking soda.
- ¼ tsp baking powder.
- ¼ tsp salt.
- ½ cup freeze-dried strawberries, crushed.
For the Cheesecake Filling:
- 4 oz cream cheese, softened.
- 2 tbsp granulated sugar.
- 1 tsp vanilla extract.
- ¼ cup strawberry jam or puree.
These ingredients come together to create a delightful dessert with a sweet and tangy filling, encased in a soft cookie shell.
Instructions
Step 1: Prepare the Cheesecake Filling
- In a bowl, combine cream cheese, granulated sugar, vanilla extract, and strawberry jam or puree.
- Mix until smooth and silky, ensuring the cream cheese is fully blended with the other ingredients.
- Cover the mixture and place it in the fridge while you work on the cookie dough.
Step 2: Make the Cookie Dough
- In a large bowl, cream together the butter, granulated sugar, and brown sugar until the mixture is light and airy.
- Add the egg and vanilla extract, blending them in until the mixture is smooth.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually incorporate the dry mixture into the wet ingredients, stirring until a smooth dough forms.
- Gently fold in the crushed freeze-dried strawberries into the dough.
Step 3: Chill the Dough
- Cover the dough and chill it in the fridge for about 30 minutes. This will help the dough firm up and make it easier to handle.
Step 4: Shape the Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop out about 1 tablespoon of dough. Flatten it slightly and place a small amount (about ½ teaspoon) of the cheesecake filling in the center.
- Place another tablespoon of dough on top of the filling, sealing the edges to form a ball.
- Place the dough balls onto the prepared baking sheet.
Step 5: Bake the Cookies
- Bake for 12-15 minutes or until the edges of the cookies are golden brown.
- Allow the cookies to rest on the baking sheet for a few minutes before transferring them to a cooling rack.

- Use fresh ingredients: For the best flavor, make sure to use fresh, high-quality ingredients. Fresh cream cheese and real strawberry jam will make a noticeable difference in taste.
- Chill the dough: Don’t skip the chilling step! It makes the dough easier to work with and helps prevent the cookies from spreading too much during baking.
- Freeze-dried strawberries: If you can’t find freeze-dried strawberries, you can substitute with regular fresh strawberries, but be sure to chop them finely and reduce the amount of liquid in the filling.
