Ingredients
Scale
- 14 medium shrimp, peeled and deveined
- 2 jalapeño cheddar sausages, cut into ½-inch slices
- 2 soft-boiled eggs (6–7 minutes, peeled)
- 1 jalapeño, thinly sliced
- 2 tbsp chopped green onions
- 1 tsp smoked paprika
- 1 tsp Cajun seasoning
- ½ tsp garlic powder
- ½ tsp chili flakes
- Salt and pepper to taste
- 1 tbsp unsalted butter
- 1 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 small yellow onion, diced
- ¼ cup diced red bell pepper
- 3 cups chicken or vegetable broth
- 1 cup half & half or whole milk
- ½ cup sharp cheddar cheese, shredded
- 2 tbsp cream cheese
- 1 tsp soy sauce
- 1 tsp chili oil or 1 tsp gochujang (optional)
- 1 ramen noodle block (or 2 for extra servings)
Instructions
- Pat shrimp dry and season with paprika, Cajun spice, garlic powder, chili flakes, salt, and pepper.
- Heat oil in a skillet and sear the shrimp until pink and lightly charred. Transfer to a plate.
- In the same pan, brown the jalapeño cheddar sausage until caramelized and slightly crisp. Set aside.
- In a large pot, melt butter and sauté garlic, onion, and bell pepper until fragrant and tender.
- Pour in broth and soy sauce, bringing the mixture to a light simmer.
- Whisk in half & half, cream cheese, and shredded cheddar until fully melted into a creamy broth.
- Add ramen noodles directly to the broth and cook until just tender, about 3–4 minutes.
- Stir in chili oil or gochujang if extra spice is desired.
- Return shrimp and sausage to the pot, toss gently, and allow flavors to meld for 1 minute.
- Serve topped with soft-boiled eggs, jalapeño slices, and green onions. Enjoy hot.
Notes
- For extra heat, keep the jalapeño seeds or add a dash of cayenne.
- Smoked gouda or pepper jack cheese can replace cheddar for different flavor tones.
- Use coconut milk for a dairy-free option with a subtle sweetness.
- Reserve a little sausage oil to drizzle on top before serving for a glossy finish.
- Garnish with sesame seeds or cilantro for added color and texture.
