- 3 tbsp olive oil
- 1 tbsp chipotle pepper in adobo sauce
For the Wrap Filling
- 4 large tortillas (whole wheat, flour, or gluten-free)
- 1 cup uncooked rice (white or brown)
- 1 small red bell pepper (sliced)
- 1 jalapeño (optional, for extra spice)
- ½ red onion (thinly sliced)
- 3 garlic cloves (minced)
- ¾ cup corn kernels (fresh or thawed frozen)
- 1 cup black beans (rinsed and drained)
- ¼ cup cotija cheese (or feta)
For the Southwest Crema (Sauce)
- ⅓ cup sour cream (or Greek yogurt for a healthier option)
- 1½ tbsp honey
- ½ – 1 tbsp chipotle peppers in adobo
- 1 tbsp lime juice
- 3 tbsp fresh cilantro (chopped)
- 1–2 tbsp water (to thin the sauce if needed)
- ¼ tsp salt
Instructions
Step1: Marinate the Chicken
- Pat the chicken dry and dice it into bite-sized pieces.
- In a bowl, mix lime juice, oil, seasonings, and chipotle peppers in adobo sauce.
- Coat the chicken well and let it marinate for at least 15 minutes (or up to 24 hours for deeper flavor).
Step2: Cook the Chicken
- Heat a large skillet over medium heat.
- Add the marinated chicken and sauté for 12-15 minutes until fully cooked.
- Remove from the pan and set aside.
