Ingredients

Scale

For the Chicken

  • ¾ lb chicken breasts (boneless, skinless)
  • ¼ cup lime juice (about 1 lime)
  • ½ tsp chili powder
  • ½ tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp salt (adjust as needed)
  • 3 tbsp olive oil
  • 1 tbsp chipotle pepper in adobo sauce

For the Wrap Filling

  • 4 large tortillas (whole wheat, flour, or gluten-free)
  • 1 cup uncooked rice (white or brown)
  • 1 small red bell pepper (sliced)
  • 1 jalapeño (optional, for extra spice)
  • ½ red onion (thinly sliced)
  • 3 garlic cloves (minced)
  • ¾ cup corn kernels (fresh or thawed frozen)
  • 1 cup black beans (rinsed and drained)
  • ¼ cup cotija cheese (or feta)

For the Southwest Crema (Sauce)

  • ⅓ cup sour cream (or Greek yogurt for a healthier option)
  • 1½ tbsp honey
  • ½1 tbsp chipotle peppers in adobo
  • 1 tbsp lime juice
  • 3 tbsp fresh cilantro (chopped)
  • 12 tbsp water (to thin the sauce if needed)
  • ¼ tsp salt

Instructions

Step1: Marinate the Chicken

  • Pat the chicken dry and dice it into bite-sized pieces.
  • In a bowl, mix lime juice, oil, seasonings, and chipotle peppers in adobo sauce.
  • Coat the chicken well and let it marinate for at least 15 minutes (or up to 24 hours for deeper flavor).

Step2: Cook the Chicken

  • Heat a large skillet over medium heat.
  • Add the marinated chicken and sauté for 12-15 minutes until fully cooked.
  • Remove from the pan and set aside.

Step3: Prepare the Wrap Ingredients

  • While the chicken is cooking, cook the rice according to the package instructions.
  • Slice the bell peppers, onions, and jalapeño.
  • Mince the garlic.

Step4: Sauté the Veggies

  • Wipe the pan clean and add 1 tsp olive oil.
  • Sauté the peppers and onions for about 5 minutes.
  • Add the garlic and cook for another minute.

Step5: Assemble the Wraps

  • Warm the tortillas in a pan or microwave.
  • Layer each tortilla with rice, chicken, veggies, beans, corn, cheese, and a drizzle of Southwest crema.
  • Wrap tightly like a burrito.

Step6: Toast & Serve

  • If desired, toast the wraps in a skillet for a crispy exterior.
  • Slice in half and serve with extra Southwest crema for dipping.

Notes

  • Use Fresh Ingredients – Fresh veggies and herbs make all the difference.
  • Adjust the Spice – Control the heat by adding or reducing jalapeños and chipotle peppers.
  • Don’t Overstuff – This will prevent the tortillas from tearing.
  • Toast for Extra Crunch – A quick toast in a pan makes these wraps extra delicious.
