Ingredients

  • 1 lb breakfast sausage
  • 10 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella (optional)
  • 2 cups frozen hash browns, thawed (or 2 cups cooked diced potatoes)
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 2 tbsp chopped parsley (optional)
  • Cooking spray or 1 tbsp butter for greasing the dish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook breakfast sausage in a skillet over medium heat until browned. Drain excess grease.
  3. Spread hash browns evenly in the baking dish. Top with sausage, onion, and bell pepper.
  4. Whisk eggs, milk, cream, garlic powder, onion powder, paprika, salt, and pepper.
  5. Stir in 1 1/2 cups cheese and pour mixture over the casserole.
  6. Top with remaining cheese.
  7. Bake 35–45 minutes until set and golden.
  8. Rest 10 minutes before slicing and serving.
