- 1 cup (150g) prepared corned beef, finely chopped
- 1 cup (115g) Swiss cheese, chopped
- ½ cup (120g) sauerkraut, drained and squeezed dry
- ¼ cup (60g) cream cheese, softened
- 1 teaspoon Dijon mustard
- 1 cup (60g) all-purpose flour
- 2 large eggs, beaten
- 1 cup (120g) Panko breadcrumbs
- Vegetable oil for frying (sunflower or canola)
- Thousand Island dressing or spicy mustard, for dipping
Instructions
- In a large bowl, mix chopped corned beef, Swiss cheese, sauerkraut, cream cheese, and Dijon mustard until well combined.
- Scoop tablespoon-sized portions and roll into balls. Place on a parchment-lined baking sheet and freeze for 20–30 minutes.
- Create a breading station: Bowl 1 with flour, Bowl 2 with beaten eggs, Bowl 3 with Panko breadcrumbs.
- Dip each ball into flour, then egg, and finally coat in breadcrumbs.
- Heat 2 inches of oil in a pan to 350°F (175°C). Fry fritters in batches for 2–3 minutes per side until golden brown.
- Drain on paper towels. Serve hot with Thousand Island dressing or spicy mustard.
