- 1/2 cup chilled butter, cubed
- 1/2 cup sugar
- 2 large eggs
- 1 cup sugar

- 16 oz crushed pineapple, well-drained
- 1/2 cup sour cream (or Greek yogurt)
- 1 teaspoon coconut extract
- 1 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a mixing bowl, combine flour, sugar, and salt. Cut in chilled butter until mixture resembles fine crumbs.
- Reserve 1 cup of the crumb mixture for topping. Press remaining mixture evenly into prepared dish and bake for 15 minutes or until lightly golden.
- In another bowl, whisk eggs, sugar, flour, salt, sour cream, and crushed pineapple until smooth.
- Spread filling evenly over the baked crust.
- Sprinkle reserved crumb mixture over the filling.
- Bake for 60 minutes or until the topping is golden and set.
- Allow to cool for 10–15 minutes. Whisk powdered sugar and coconut extract until smooth and drizzle over bars.
- Cut into squares and serve.
