Instructions
- Preheat oven to 350°F (175°C). Prepare the vanilla cake mix according to package instructions.
- Pour the batter into a greased 9×13 inch baking dish and bake for 28–32 minutes, or until a toothpick comes out clean. Let the cake cool completely.
- Using the handle of a wooden spoon, poke holes evenly across the cooled cake.
- Spoon the peach pie filling over the cake, pressing gently to ensure it seeps into the holes.
- In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Spread the whipped cream evenly over the cake.
- Top with fresh peach slices, crushed graham crackers, and mint leaves.
- Refrigerate the cake for at least 2 hours before serving.
