Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh peaches
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract; mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in diced fresh peaches gently with a spatula.
  7. Drop rounded tablespoons of dough onto prepared baking sheets.
  8. Mix cinnamon and 1/4 cup sugar in a small bowl, then sprinkle over each cookie.
  9. Bake for 12-15 minutes, or until edges are golden brown and centers are set.
  10. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack.
