Ingredients

Scale
  • Main Ingredients:
  • 1 lb ground beef
  • You can also use ground turkey or chicken.
  • 1 medium onion, diced
  • Adds sweetness and depth.
  • 2 cloves garlic, minced
  • Flavor essential.
  • 2 cups beef broth
  • Use vegetable broth for a lighter version.
  • 2 cups elbow macaroni
  • Substitute with gluten-free or whole wheat pasta.
  • 1 cup shredded cheddar cheese
  • Use freshly grated for best melting.
  • 1 cup whole milk
  • Or almond/oat milk for dairy-free option.
  • 1 tbsp tomato paste
  • Optional: Adds a ketchup-like richness.
  • 1 tsp Worcestershire sauce
  • Deepens the umami, optional but recommended.
  • Salt & black pepper to taste
  • Optional Toppings:
  • Chopped pickles
  • Ketchup/mustard drizzle
  • Crumbled bacon
  • Green onions or parsley

Instructions

Step 1: Brown the Ground Beef

In a large heavy-bottomed pot or Dutch oven, cook:

  • 1 lb ground beef

  • 1 diced onion

  • 2 minced garlic cloves

Cook over medium heat until browned (about 6–8 minutes). Drain excess fat.

Step 2: Add Broth & Pasta

Pour in:

  • 2 cups beef broth

  • 1 tbsp tomato paste

  • 1 tsp Worcestershire sauce

  • Salt and pepper to taste

Bring to a boil. Add 2 cups elbow macaroni and stir well.

Step 3: Cook Until Pasta is Al Dente

Reduce to a simmer and cook, uncovered, for 7–9 minutes until the macaroni is just tender. Stir occasionally to prevent sticking.

Step 4: Add Cheese and Milk

Reduce heat to low. Stir in:

  • 1 cup milk

  • 1 cup shredded cheddar cheese (gradually)

Continue stirring until fully melted and smooth. Adjust seasoning if needed.

 Step 5: Serve It Up!

Ladle into bowls. Top with:

  • More shredded cheese

  • Chopped pickles

  • Optional ketchup/mustard drizzle

Notes

  • Use freshly shredded cheese – Pre-shredded has anti-caking agents that affect melting.

  • Add veggies – Toss in bell peppers, carrots, or spinach for extra nutrition.

  • Low-carb swap – Replace pasta with cauliflower florets or zucchini noodles.

  • Thicker soup? – Mix 1 tbsp flour with milk before adding.

  • Thinner soup? – Add extra broth or milk before serving.
