- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 ½ cups finely chopped pecans (plus extra for topping)
- 2 cups white chocolate melting wafers or chips
- 1 teaspoon coconut oil or shortening (optional, for smoother coating)
Instructions
- Beat the softened cream cheese and powdered sugar together until smooth and lump-free.
- Mix in the vanilla extract and chopped pecans until the mixture is thick and holds its shape.
- Roll into small balls and place on a parchment-lined tray.
- Freeze for 15–20 minutes until firm.
- Melt the white chocolate gently using a double boiler or in the microwave in 30-second intervals, stirring between each. Add coconut oil if desired.
- Dip each chilled truffle into the melted chocolate and let excess drip off.
- Place dipped truffles on parchment paper and immediately sprinkle with extra chopped pecans.
- Refrigerate until the coating is fully firm and truffles are ready to serve.
