Ingredients

Scale
  • 8 oz noodles (lo mein or spaghetti)
  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 1 medium carrot, diced
  • 3 cloves garlic, minced
  • 1/3 cup soy sauce (low-sodium recommended)
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 2 teaspoons cornstarch mixed with 2 tablespoons water
  • 2 tablespoons cooking oil
  • 1/4 cup green onions, chopped (for garnish)

Optional substitutions:

  • Use rice noodles or zucchini noodles for a gluten-free option.
  • Swap ground turkey or chicken for beef if preferred.

Instructions

Step1: Cook the Noodles

  1. Boil water and cook noodles according to package instructions. Drain and set aside.

Step2: Prepare the Ground Beef

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add ground beef and cook until browned. Drain any excess fat and remove beef from the pan.

Step3: Sauté the Vegetables

  1. In the same skillet, heat the remaining oil. Add onions, carrots, and garlic. Sauté for 3-4 minutes until softened.

Step4: Make the Sauce

  1. In a small bowl, mix soy sauce, brown sugar, ginger, and black pepper. Pour this sauce into the skillet with the vegetables.

Step5: Combine the Ingredients

  1. Return the cooked beef to the skillet. Add the cornstarch slurry, stirring constantly until the sauce thickens (about 2 minutes).

Step6: Mix in the Noodles

  1. Toss the cooked noodles into the skillet, ensuring they are fully coated with the sauce. Mix well.

Step7: Garnish and Serve

  1. Remove from heat, garnish with green onions, and serve immediately.

Notes

  • Use fresh garlic and ginger for a more robust flavor.
  • For added heat, sprinkle red chili flakes or drizzle with sriracha sauce.
  • Add more vegetables like broccoli, snap peas, or bell peppers to boost nutrition.
