Ingredients

For the Patties:

  • 2 cans (6 oz each) salmon, drained and flaked

  • 1 cup fresh spinach, finely chopped (or ½ cup thawed, drained frozen spinach)

  • ¼ cup red onion, finely chopped

  • 2 cloves garlic, minced

  • ⅓ cup feta cheese, crumbled

  • ½ cup breadcrumbs (panko or regular)

  • 2 large eggs, beaten

  • 2 tbsp fresh parsley, chopped

  • 1 tbsp fresh dill (optional)

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tsp dried oregano

  • Salt and pepper, to taste

For Frying:

  • Olive oil (for frying)

Optional Garnish:

  • Lemon wedges

  • Tzatziki sauce


Instructions

Step 1: Prepare the Salmon

Drain the salmon from the cans. If you prefer, remove any bones or skin. Flake the salmon with a fork in a large mixing bowl. The flaked salmon will form the base of the patties, so make sure it’s well broken up and easy to mix with the other ingredients.

Step 2: Sauté the Spinach

Heat a dry pan over medium heat and add the spinach. Cook for about 2 minutes, stirring occasionally, until the spinach is wilted. Remove it from the heat and allow it to cool for a few minutes. Once cooled, squeeze out any excess moisture using a paper towel or clean cloth to avoid soggy patties.

Step 3: Mix Everything Together

In the bowl with the flaked salmon, add the cooked spinach, red onion, garlic, crumbled feta cheese, breadcrumbs, beaten eggs, parsley, dill (if using), lemon juice, lemon zest, and dried oregano. Season with salt and pepper to taste. Mix everything well until the ingredients are evenly distributed. The mixture should be moist but firm enough to hold its shape when forming patties.

Step 4: Shape the Patties

Take a small portion of the mixture (about 2-3 tablespoons) and roll it into a ball. Flatten the ball slightly to form a patty. The size of the patties should be about 3 inches in diameter. This recipe should make about 6–8 patties, depending on the size you prefer. Make sure the patties are evenly shaped so they cook uniformly.

Step 5: Cook the Patties

Heat olive oil in a large skillet over medium heat. Once the oil is hot, carefully add the patties to the pan. Cook the patties for 3-4 minutes on each side, or until golden brown and crispy.
