- 1½ cups green olives, pitted
- 1½ cups sharp white cheddar or Monterey Jack cheese, cubed
- ½ cup roasted red peppers, chopped
- ⅓ cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon chopped fresh parsley
- 1 teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes (optional)
- 1 clove garlic, minced
- Salt and freshly ground black pepper, to taste
Instructions
- Prepare the ingredients: pit and rinse olives, cube cheese, chop roasted red peppers, and mince the garlic.
- In a large mixing bowl, combine the olives, cubed cheese, and roasted red peppers.
- In a small bowl, whisk together olive oil, red wine vinegar, parsley, oregano, red pepper flakes (optional), garlic, salt, and pepper.
- Pour the marinade over the olive and cheese mixture and toss gently to coat evenly.
- Transfer the mixture to a clean jar or airtight container, pressing down lightly to submerge the mixture in the marinade.
- Seal and refrigerate for at least 24 hours, shaking gently once or twice during marination.
- Serve chilled or at room temperature as part of an appetizer spread or antipasto platter.
