  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the ingredients: pit and rinse olives, cube cheese, chop roasted red peppers, and mince the garlic.
  2. In a large mixing bowl, combine the olives, cubed cheese, and roasted red peppers.
  3. In a small bowl, whisk together olive oil, red wine vinegar, parsley, oregano, red pepper flakes (optional), garlic, salt, and pepper.
  4. Pour the marinade over the olive and cheese mixture and toss gently to coat evenly.
  5. Transfer the mixture to a clean jar or airtight container, pressing down lightly to submerge the mixture in the marinade.
  6. Seal and refrigerate for at least 24 hours, shaking gently once or twice during marination.
  7. Serve chilled or at room temperature as part of an appetizer spread or antipasto platter.
