Instructions
- In a medium bowl, whisk together the heavy whipping cream, sweetened condensed milk, and lime juice until smooth.
- In a separate bowl, melt white chocolate chips using a microwave or double boiler. Stir until smooth.
- Add the softened butter and lime zest to the melted white chocolate. Mix well.
- Slowly add the wet mixture to the chocolate mixture, stirring until fully combined.
- Stir in crushed graham crackers until the mixture is evenly mixed.
- Cover and refrigerate for at least 2 hours, or until firm enough to shape.
- Once chilled, scoop out small portions and roll into 1-inch balls.
- Place truffles on a parchment-lined baking sheet. Optionally, dip in melted white chocolate or roll in extra crumbs or coconut.
