Ingredients

  • 4 tablespoons lime juice (freshly squeezed)

  • 2 tablespoons honey

  • 1 tablespoon soy sauce

  • 7 chicken thighs (about 7 or 8, depending on skillet size)

  • ½ teaspoon salt

  • 2 tablespoons olive oil

  • 2 green onions (chopped, for garnish)

  • Lime slices (for garnish)

Instructions

Step 1: Season the Chicken

Season the chicken thighs with salt and ensure it’s well-distributed. This is crucial for enhancing the flavor of the chicken.

Step 2: Brown the Chicken

Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs, skin-side down, and cook for about 5 minutes to achieve a crispy, golden-brown crust.

Step 3: Add the Honey Lime Sauce

In a bowl, mix lime juice, honey, and soy sauce. Once the chicken is browned, flip the thighs so the skin side is up, and pour the sauce over the chicken. Lower the heat, cover, and cook for 14-18 minutes, allowing the chicken to absorb the flavors from the sauce.

Step 4: Serve

Remove the chicken from the skillet and drizzle the sauce over it. Top with chopped green onions and lime slices for garnish.

Notes

  • Perfectly Crispy Skin: For extra crispy chicken skin, cook it for an additional 5 minutes before covering it with the sauce.

  • Substitute for Soy Sauce: For a gluten-free version, you can replace soy sauce with tamari or coconut aminos.

  • Add Spice: If you like a little heat, try adding chili flakes or a diced jalapeño to the honey-lime sauce for a spicy kick.
