  • 2 fresh peaches, sliced

  • 2 tablespoons soy sauce

  • 2 tablespoons honey

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon Dijon mustard

  • 1 tablespoon brown sugar

  • 1 jalapeño, thinly sliced (remove seeds for less heat)

  • ½ red chili pepper, sliced

  • 2 tablespoons chopped fresh parsley (for garnish)

  • Dietary Swaps:
  • For gluten-free: Use tamari instead of soy sauce.

  • For low-sugar: Reduce brown sugar and honey slightly.

  • For vegan: Use tofu instead of chicken and maple syrup instead of honey.


Instructions

 Step 1: Prep the Chicken

  • Pat chicken thighs dry using a paper towel.

  • Season both sides with salt and black pepper.

 Step 2: Sear the Chicken

  • Heat olive oil in an oven-safe skillet over medium-high heat.

  • Add chicken thighs and sear for 3–4 minutes per side, until golden brown.

  • Remove chicken and set aside.

 Step 3: Make the Sauce

  • In the same pan, reduce heat to medium.

  • Add minced garlic and ginger. Sauté for 1–2 minutes until fragrant.

  • Add sliced peaches, soy sauce, honey, vinegar, Dijon mustard, brown sugar, jalapeño, and chili pepper.

  • Stir well and simmer for 3–4 minutes.

 Step 4: Bake to Perfection

  • Return seared chicken to the skillet.

  • Spoon sauce over the chicken.

  • Transfer skillet to a preheated oven at 375°F (190°C).

  • Bake uncovered for 20–25 minutes, or until chicken is cooked through (internal temp: 165°F).
