Description

This Chocolate Blackberry Cake is a rich, moist, and decadent dessert topped with dark chocolate ganache and fresh blackberries. Perfect for special occasions or as a luxurious treat.


Ingredients

  • 1 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup fresh blackberries
  • 1/2 cup blackberry jam
  • 1 cup dark chocolate chips
  • 1 cup heavy cream
  • Extra blackberries for garnish

Instructions

  1. Preheat the oven to 350°F (175°C) and grease three 9-inch round cake pans.
  2. In a large bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract. Mix until smooth.
  4. Gradually stir in boiling water (batter will be thin).
  5. Divide the batter evenly among the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool the cakes in the pans for 10 minutes, then remove to wire racks to cool completely.
  8. Heat heavy cream until just simmering, then pour over dark chocolate chips. Stir to create a smooth ganache.
  9. Once cakes are cooled, place one layer on a plate, spread blackberry jam, add ganache, and top with a few blackberries.
  10. Repeat for the second layer and finish the top with ganache and more blackberries.
  11. Chill for at least 1 hour before slicing and serving.

Notes

  • Use room temperature ingredients for a smoother batter.
  • For a richer flavor, add a teaspoon of espresso powder to the dry ingredients.
  • If using frozen blackberries, thaw and drain them first.
  • Store the cake in an airtight container in the refrigerator for up to 5 days.
