Ingredients

Scale
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 4 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup sour cream
  • 1 cup pecans (chopped)
  • ½ cup chocolate chips
  • ½ cup heavy cream
  • ½ cup dark chocolate (chopped)
  • Extra pecans for garnish

Optional substitutions:

  • For a dairy-free version, substitute butter with vegan margarine and sour cream with coconut cream.
  • Almonds or walnuts can replace pecans if needed.

Instructions

Step1: Preheat the oven

Set your oven to 350°F (175°C) and grease a loaf pan.

Step2: Cream the butter and sugars

In a large bowl, cream together the butter, granulated sugar, and brown sugar until the mixture is light and fluffy.

Step3: Add eggs and vanilla

Add the eggs, one at a time, beating well after each addition. Then, stir in the vanilla extract.

Step4: Mix dry ingredients

In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.

Step5: Combine wet and dry ingredients

Gradually add the dry mixture to the creamed butter, alternating with sour cream. Start and end with the dry ingredients, and mix until just combined.

Step6: Fold in pecans and chocolate chips

Gently fold in the chopped pecans and chocolate chips for that extra gooeyness.

Step7: Bake

Pour the batter into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Step8: Prepare the ganache

Heat the heavy cream in a saucepan until it begins to simmer. Remove from heat, add chopped dark chocolate, and let it sit for 5 minutes before stirring until smooth.

Step9: Garnish and serve

Pour the ganache over the cooled cake and garnish with extra pecans.

Notes

  • Use room-temperature ingredients for a better texture.
  • Don’t overmix the batter; this helps keep the cake light and airy.
  • For extra flavor, toast the pecans before adding them.
