Instructions
Step 1: Prepare the Zucchini
- Grate the zucchini using a box grater or a food processor.
- Sprinkle 1 teaspoon salt over the zucchini and let it sit for 10 minutes to remove excess moisture.
- Place the zucchini in a clean kitchen towel and squeeze out as much liquid as possible.
Step 2: Mix the Batter
- In a large mixing bowl, combine the zucchini, flour, Parmesan cheese, garlic powder, onion powder, black pepper, egg, parsley, and mozzarella (if using).
- Stir well until everything is evenly mixed.
Step 3: Cook the Fritters
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Scoop about 2 tablespoons of batter for each fritter and place it in the pan.
- Flatten slightly with a spoon and cook for 3-4 minutes per side, until golden brown and crispy.
