Ingredients

  • 600 g chicken breast, cut into chunks
  • 500 g baby potatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil and butter over medium-high heat.
  3. Add chicken chunks and sear until golden brown on all sides, about 5-7 minutes. Remove from skillet and set aside.
  4. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  5. Pour in heavy cream and Parmesan cheese. Stir in Italian seasoning, salt, and pepper. Simmer until sauce thickens.
  6. Add baby potatoes to the skillet, coating them in the creamy sauce. Return chicken chunks to the skillet.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes or until potatoes are tender and chicken is cooked through.
  8. Remove from the oven, garnish with fresh parsley, and serve hot.

  • Use freshly grated Parmesan for a richer flavor.
  • To make it dairy-free, use coconut milk and nutritional yeast.
