- 600 g chicken breast, cut into chunks
- 500 g baby potatoes, halved
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large oven-safe skillet, heat olive oil and butter over medium-high heat.
- Add chicken chunks and sear until golden brown on all sides, about 5-7 minutes. Remove from skillet and set aside.
- Add minced garlic to the skillet and sauté for 1 minute until fragrant.
- Pour in heavy cream and Parmesan cheese. Stir in Italian seasoning, salt, and pepper. Simmer until sauce thickens.
- Add baby potatoes to the skillet, coating them in the creamy sauce. Return chicken chunks to the skillet.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes or until potatoes are tender and chicken is cooked through.
- Remove from the oven, garnish with fresh parsley, and serve hot.
