Description

These Slow Cooker French Dip Sandwiches feature tender shredded beef, caramelized onions, and gooey provolone, served on toasted hoagie rolls with a rich au jus for dipping. It’s the ultimate comfort food for any day of the week.


Ingredients

  • 2 lbs beef chuck roast
  • 2 onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups beef broth (low sodium preferred)
  • 1/4 cup soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp freshly ground black pepper
  • 6 hoagie rolls or sub rolls
  • 6 slices provolone cheese

Instructions

  1. Thinly slice onions and mince garlic. Trim visible fat from chuck roast.
  2. In a medium bowl, mix beef broth, soy sauce, Worcestershire sauce, thyme, and black pepper.
  3. Place beef roast in slow cooker. Add onions and garlic on top. Pour liquid mixture over the beef.
  4. Cook on LOW for 8 hours or HIGH for 5–6 hours until beef shreds easily with a fork.
  5. Remove roast, shred with forks, and return to slow cooker to soak in juices.
  6. Preheat oven to 350°F (175°C). Split hoagie rolls and place open on baking sheet.
  7. Fill each roll with shredded beef and a slice of provolone cheese.
  8. Bake for 5 minutes until cheese is melted. Optional: broil for 1–2 minutes for golden finish.
  9. Strain and serve cooking liquid as au jus for dipping.

Notes

  • Add pepperoncini for a spicy kick.
  • Swap provolone for Gruyère or Swiss cheese for a different flavor.
  • Use gluten-free buns to make it gluten-friendly.
