Description
These Slow Cooker French Dip Sandwiches feature tender shredded beef, caramelized onions, and gooey provolone, served on toasted hoagie rolls with a rich au jus for dipping. It’s the ultimate comfort food for any day of the week.

- 2 lbs beef chuck roast
- 2 onions, thinly sliced
- 3 cloves garlic, minced
- 2 cups beef broth (low sodium preferred)
- 1/4 cup soy sauce
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp freshly ground black pepper
- 6 hoagie rolls or sub rolls
- 6 slices provolone cheese
Instructions
- Thinly slice onions and mince garlic. Trim visible fat from chuck roast.
- In a medium bowl, mix beef broth, soy sauce, Worcestershire sauce, thyme, and black pepper.
- Place beef roast in slow cooker. Add onions and garlic on top. Pour liquid mixture over the beef.
- Cook on LOW for 8 hours or HIGH for 5–6 hours until beef shreds easily with a fork.
- Remove roast, shred with forks, and return to slow cooker to soak in juices.
- Preheat oven to 350°F (175°C). Split hoagie rolls and place open on baking sheet.
- Fill each roll with shredded beef and a slice of provolone cheese.
- Bake for 5 minutes until cheese is melted. Optional: broil for 1–2 minutes for golden finish.
- Strain and serve cooking liquid as au jus for dipping.
