  • Granulated sugar: 3/4 cup
  • Light brown sugar (packed): 1/4 cup
  • Unsalted butter (softened): 3/4 cup
  • Egg: 1 large
  • Vanilla extract: 1 1/2 teaspoons
  • Eggnog (full-fat): 1/2 cup
  • For the glaze:
    • Powdered sugar: 1 cup
    • Eggnog: 2-3 tablespoons

Instructions

Step1: Preparation

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.

Step2: Make the Dough

  1. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  2. In another bowl, cream butter, granulated sugar, and brown sugar until light and fluffy using a mixer.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually mix in the eggnog, followed by the dry ingredients. Continue until a smooth dough forms.

Step3: Shape the Cookies

  1. Use a medium cookie scoop to form 2-tablespoon-sized dough balls.
  2. Place the dough balls 2 inches apart on the baking sheets. Flatten each with the bottom of a glass sprayed with non-stick spray to about 1/2 inch thickness.

Step4: Bake

Bake for 9-11 minutes until the tops are set and edges lightly browned. Cool cookies on the sheet for 2-3 minutes, then transfer to a wire rack to cool completely.

Step5: Glaze

  1. Whisk powdered sugar and eggnog until smooth.
