Ingredients

1 medium zucchini, grated
½ cup corn kernels (fresh, frozen, or canned)
1 large carrot, grated
2 cloves garlic, minced
½ small onion, finely chopped
2 tablespoons fresh parsley, chopped
¼ cup grated Parmesan cheese
½ cup all-purpose flour
½ teaspoon salt

½ teaspoon black pepper
½ teaspoon smoked paprika
1 large egg, beaten
2 tablespoons milk
Olive oil for frying

 Substitutions & Additions:
Swap Parmesan for cheddar if you want extra cheesiness.
Make them gluten-free by using almond flour or oat flour.
Add chopped green onions for a bolder flavor.

Instructions

Step 1: Prep the Zucchini

  • Grate the zucchini and place it in a clean kitchen towel.
  • Squeeze out as much moisture as possible to prevent soggy fritters.

Step 2: Make the Batter

  • In a large bowl, mix the zucchini, corn, carrot, onion, garlic, flour, Parmesan, baking powder, salt, pepper, and paprika.
  • In another bowl, whisk the egg and milk, then combine with the dry mixture.
  • Stir well until you get a thick batter.

Step 3: Fry to Perfection

  • Heat olive oil in a non-stick skillet over medium heat.
  • Scoop ¼ cup batter per fritter into the pan and flatten slightly.
  • Cook for 3-4 minutes per side until golden brown and crispy.

Step 4: Drain & Serve

  • Transfer to a plate lined with paper towels to absorb excess oil.
  • Garnish with fresh parsley and serve with your favorite dipping sauce.

Notes

Always drain the zucchini well to keep fritters crispy.
Use medium heat to prevent burning while cooking evenly.
Make them in an air fryer at 375°F (190°C) for 10 minutes for a healthier version.
Add a touch of spice with cayenne pepper or chili flakes.
