Ingredients
1 medium zucchini, grated

1 large carrot, grated
2 cloves garlic, minced

2 tablespoons fresh parsley, chopped
¼ cup grated Parmesan cheese
½ cup all-purpose flour
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika
1 large egg, beaten
2 tablespoons milk
Olive oil for frying

Instructions
Step 1: Prep the Zucchini
- Grate the zucchini and place it in a clean kitchen towel.
- Squeeze out as much moisture as possible to prevent soggy fritters.
Step 2: Make the Batter
- In a large bowl, mix the zucchini, corn, carrot, onion, garlic, flour, Parmesan, baking powder, salt, pepper, and paprika.
- In another bowl, whisk the egg and milk, then combine with the dry mixture.
- Stir well until you get a thick batter.
Step 3: Fry to Perfection
- Heat olive oil in a non-stick skillet over medium heat.
- Scoop ¼ cup batter per fritter into the pan and flatten slightly.
- Cook for 3-4 minutes per side until golden brown and crispy.
Step 4: Drain & Serve
- Transfer to a plate lined with paper towels to absorb excess oil.
- Garnish with fresh parsley and serve with your favorite dipping sauce.
