Description

Ingredients

  • 1 medium zucchini, grated and drained
  • 1 medium carrot, grated
  • 1 medium potato, grated and drained
  • 4 tablespoons rolled oats
  • 100 g shredded cheese (optional, can use light or vegan cheese)
  • 2 garlic cloves, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 large eggs
  • Salt and black pepper to taste
  • 1 tablespoon olive oil (for frying)

Instructions

  1. Grate the zucchini, carrot, and potato. Drain the zucchini and potato well using a clean cloth or fine strainer to remove excess moisture.
  2. In a large bowl, combine the grated zucchini, carrot, potato, oats, cheese, garlic, parsley, eggs, salt, and pepper. Mix well.
  3. With wet hands, shape the mixture into small meatballs or oval patties.
  4. Heat the olive oil in a non-stick skillet over medium heat.
  5. Cook the veggie bites in batches for about 3-4 minutes on each side or until golden brown and crispy.
  6. Transfer the cooked bites to a paper towel to absorb excess oil.
  7. Serve warm with your favorite dipping sauce or as a side dish.

Notes

  • For extra crispiness, bake the fried bites at 375°F (190°C) for 5 minutes.
  • To make it vegan, replace eggs with flaxseed eggs (1 tbsp flaxseed + 2.5 tbsp water per egg).
  • Use gluten-free oats for a gluten-free version.
  • Serve with sauces like tzatziki, marinara, or spicy aioli for added flavor.
