- 1 medium zucchini, grated and drained
- 1 medium carrot, grated
- 1 medium potato, grated and drained
- 4 tablespoons rolled oats
- 100 g shredded cheese (optional, can use light or vegan cheese)
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley, chopped
- 2 large eggs
- Salt and black pepper to taste
- 1 tablespoon olive oil (for frying)
Instructions
- Grate the zucchini, carrot, and potato. Drain the zucchini and potato well using a clean cloth or fine strainer to remove excess moisture.
- In a large bowl, combine the grated zucchini, carrot, potato, oats, cheese, garlic, parsley, eggs, salt, and pepper. Mix well.
- With wet hands, shape the mixture into small meatballs or oval patties.
- Heat the olive oil in a non-stick skillet over medium heat.
- Cook the veggie bites in batches for about 3-4 minutes on each side or until golden brown and crispy.
- Transfer the cooked bites to a paper towel to absorb excess oil.
- Serve warm with your favorite dipping sauce or as a side dish.
