Ingredients
For the Filling:
1 lb lump crab meat (picked over for shells)
½ cup mayonnaise (adds creaminess)
1 large egg (lightly beaten)
1 tsp Dijon mustard (adds a tangy depth)
1 tsp Worcestershire sauce (for umami flavor)
1 tsp Old Bay seasoning (for classic crab cake flavor)
½ cup panko breadcrumbs (for a slight crunch)
¼ cup finely chopped green onions (adds freshness)
1 tbsp lemon juice (balances the richness)
Salt and pepper to taste
For the Egg Rolls:
12 egg roll wrappers
Vegetable oil (for frying)
For the Spicy Mayo Dipping Sauce (Optional):
½ cup mayonnaise
1 tbsp Sriracha
1 tsp lemon juice
½ tsp honey

Instructions
In a large mixing bowl, combine lump crab meat, mayonnaise, egg, Dijon mustard, Worcestershire sauce, Old Bay seasoning, panko breadcrumbs, green onions, and lemon juice.
Gently mix until everything is combined, being careful not to break up the crab meat too much.
Taste and adjust seasoning with salt and pepper.
Lay an egg roll wrapper on a clean surface in a diamond shape.
Place 2–3 tablespoons of the crab mixture near the center of the wrapper.
Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the top corner with a little water.
Repeat with the remaining wrappers and filling.
Heat about 2 inches of vegetable oil in a skillet or deep fryer to 350°F (175°C).
Fry the egg rolls in batches, turning occasionally, until they are golden brown and crispy (about 3–4 minutes).
Remove and drain on a paper towel-lined baking sheet.
In a small bowl, whisk together mayonnaise, Sriracha, lemon juice, and honey until smooth.
Adjust the spice level as desired.
