  • 4 egg yolks

If you have dietary restrictions, you can easily substitute the chicken broth with vegetable broth for a vegetarian option.


Instructions

Step 1: Prepare the Base

In a large pot, heat olive oil and butter over medium heat. Add the chopped onion and sauté for about 5 minutes until softened.

Step 2: Infuse with Garlic

Add the peeled garlic cloves to the pot and cook for 2-3 minutes, stirring constantly to prevent burning.

Step 3: Simmer the Soup

Pour in the chicken or vegetable broth, followed by the thyme sprigs and bay leaves. Bring it to a boil, then reduce the heat to a simmer. Let it cook for about 30 minutes, allowing the garlic to soften and release its robust flavor.

Step 4: Finish the Soup

Remove the thyme sprigs and bay leaves from the soup. Season with salt and pepper to taste.

Step 5: Thicken with Egg Yolks and Parmesan

In a small bowl, whisk together the egg yolks and grated Parmesan. Gradually whisk in a ladle of hot soup into the egg mixture to temper it. Slowly return the tempered mixture back into the pot, and let it simmer for another 5 minutes, stirring constantly until the soup thickens.

Step 6: Serve
