These Cheesy Sausage and Egg Wraps are the perfect grab-and-go breakfast. Loaded with fluffy scrambled eggs, savory sausage, and two kinds of melty cheese, all wrapped in a soft tortilla. Great for meal prep or a satisfying morning treat.

- 4 large flour tortillas
- 1/2 pound breakfast sausage
- 6 large eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1/2 tsp salt
- 1 tsp black pepper
- 1 tbsp butter
- 1/2 tsp garlic powder
- 1 tsp onion powder
- Optional: Hot sauce
- Optional: Sliced jalapeños
- Optional: Salsa
Instructions
- Heat a large skillet over medium heat. Add sausage and cook for 6–8 minutes, breaking it up until browned and fully cooked. Remove and set aside.
- In a bowl, whisk eggs, milk, salt, pepper, garlic powder, and onion powder.
- In the same skillet, melt butter over medium-low heat. Add the egg mixture and stir gently until eggs are soft and fluffy, about 3–5 minutes. Remove from heat.
- Warm tortillas in a dry skillet for 10–15 seconds per side or in the microwave for 10 seconds.
- Lay tortillas on a flat surface. Sprinkle cheddar and Monterey Jack cheese in the center of each.
- Top with scrambled eggs and cooked sausage. Add optional ingredients like hot sauce, jalapeños, or salsa if desired.
- Fold in the sides and roll each wrap tightly like a burrito.
- Toast seam-side down in a hot skillet for 1–2 minutes if desired. Serve warm.
