Description

These Cheesy Sausage and Egg Wraps are the perfect grab-and-go breakfast. Loaded with fluffy scrambled eggs, savory sausage, and two kinds of melty cheese, all wrapped in a soft tortilla. Great for meal prep or a satisfying morning treat.

Ingredients

Scale
  • 4 large flour tortillas
  • 1/2 pound breakfast sausage
  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1 tbsp butter
  • 1/2 tsp garlic powder
  • 1 tsp onion powder
  • Optional: Hot sauce
  • Optional: Sliced jalapeños
  • Optional: Salsa

Instructions

  1. Heat a large skillet over medium heat. Add sausage and cook for 6–8 minutes, breaking it up until browned and fully cooked. Remove and set aside.
  2. In a bowl, whisk eggs, milk, salt, pepper, garlic powder, and onion powder.
  3. In the same skillet, melt butter over medium-low heat. Add the egg mixture and stir gently until eggs are soft and fluffy, about 3–5 minutes. Remove from heat.
  4. Warm tortillas in a dry skillet for 10–15 seconds per side or in the microwave for 10 seconds.
  5. Lay tortillas on a flat surface. Sprinkle cheddar and Monterey Jack cheese in the center of each.
  6. Top with scrambled eggs and cooked sausage. Add optional ingredients like hot sauce, jalapeños, or salsa if desired.
  7. Fold in the sides and roll each wrap tightly like a burrito.
  8. Toast seam-side down in a hot skillet for 1–2 minutes if desired. Serve warm.

Notes

  • Use turkey sausage for a leaner option.
  • Add jalapeños or hot sauce for extra heat.
  • Can be made ahead and frozen for quick breakfasts.
  • Microwave leftovers for 30–45 seconds to reheat.
