  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh chives
  • 2 tablespoons melted butter
  • 1/4 cup all-purpose flour (or almond flour for gluten-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 large eggs
  • Olive oil for greasing

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine mashed potatoes, cheddar cheese, Parmesan, chives, melted butter, flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Beat the eggs lightly and fold them into the potato mixture.
  4. Using a cookie scoop or your hands, shape the mixture into golf ball-sized puffs and place them on the prepared baking sheet.
  5. Lightly brush the tops with olive oil for a crispy finish.
  6. Bake in the preheated oven for 20-25 minutes or until the puffs are golden and crispy on the outside.
  7. Remove from the oven and let cool slightly before serving.
  8. Garnish with additional chives if desired and serve warm.
