Description

Cheesy Chicken Fajita Casserole is a comforting Tex-Mex-inspired dish combining tender shredded chicken, rice, creamy sauce, and melted cheese. Perfect for a quick and flavorful weeknight meal, it’s packed with peppers, tomatoes, and fajita seasoning for a zesty kick.

  • 4 cups shredded cooked chicken (about 3 large breasts)
  • 2 cups instant rice, uncooked
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen diced onion and bell pepper blend
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 1/2 cups chicken broth
  • 1 packet (1.12 oz) fajita seasoning
  • 2 cups shredded Mexican blend cheese, divided (8 oz)
  • Optional: chopped cilantro, sliced jalapeños, lime wedges for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large bowl, mix shredded chicken, instant rice, cream of chicken soup, sour cream, frozen onion and bell pepper blend, diced tomatoes with green chilies, chicken broth, and fajita seasoning until well combined.
  3. Pour mixture evenly into the prepared baking dish.
  4. Top with 1 cup of shredded Mexican blend cheese.
  5. Bake uncovered for 25–30 minutes, or until rice is tender and casserole is hot and bubbly.
  6. Remove from oven and sprinkle the remaining 1 cup cheese on top. Let it melt for a few minutes before serving.

Notes

  • For extra spice, add diced jalapeños or a few drops of hot sauce.
  • Use rotisserie chicken for convenience.
  • If using regular long-grain rice, cook it halfway before adding to the mix.
  • Make ahead by assembling the casserole a day before and refrigerating it; bake when ready to serve.
  • Top with fresh cilantro and a squeeze of lime for a fresh finish.
