  • ¼ cup diced tomatoes
  • ¼ cup red onion, finely chopped
  • ¼ cup sour cream (or Greek yogurt)
  • 2 tbsp chipotle sauce
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp butter

Instructions

  1. In a bowl, combine shredded chicken, chipotle sauce, smoked paprika, garlic powder, cumin, salt, and black pepper. Stir to coat.
  2. Heat olive oil in a pan over medium heat, add the seasoned chicken, and sauté for 3-4 minutes until warmed through.
  3. Lay tortillas on a clean surface. Spread sour cream over each tortilla, then sprinkle cheddar and Monterey Jack cheese.
