- 1/2 cup barbecue sauce
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 small red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped

- Let quesadillas rest briefly before cutting to keep filling intact.
- Make ahead by preparing the BBQ chicken mixture in advance.
- Customize with jalapeños, sautéed vegetables, or alternative cheeses.
