Description

A refreshing Mexican shrimp cocktail made with juicy shrimp, tangy lime juice, tomato, and creamy avocado. Perfect as a light seafood appetizer or party starter.


Ingredients

  • 1 lb cooked shrimp, peeled and deveined
  • 1 cup tomato juice
  • 1/2 cup ketchup
  • 1/4 cup lime juice (freshly squeezed)
  • 1/2 cup red onion, finely chopped
  • 1/2 cup cucumber, diced
  • 1/2 cup tomato, diced
  • 1 avocado, diced
  • 1 jalapeño, finely chopped (optional)
  • 2 tbsp fresh cilantro, chopped
  • Salt and pepper to taste
  • Tortilla chips or saltine crackers, for serving

Instructions

  1. In a large bowl, combine tomato juice, ketchup, and lime juice. Mix well.
  2. Add shrimp, red onion, cucumber, tomato, jalapeño, and cilantro. Stir gently until coated.
  3. Season with salt and pepper to taste.
  4. Chill in the refrigerator for at least 30 minutes to let flavors meld.
  5. Before serving, gently fold in diced avocado.
  6. Serve cold with tortilla chips or crackers on the side.

Notes

  • For extra heat, add hot sauce to the cocktail base.
  • Use freshly cooked shrimp for the best flavor, but pre-cooked works too.
  • Serve in cocktail glasses for an authentic presentation.
