A refreshing Mexican shrimp cocktail made with juicy shrimp, tangy lime juice, tomato, and creamy avocado. Perfect as a light seafood appetizer or party starter.

- 1 lb cooked shrimp, peeled and deveined
- 1 cup tomato juice
- 1/2 cup ketchup
- 1/4 cup lime juice (freshly squeezed)
- 1/2 cup red onion, finely chopped
- 1/2 cup cucumber, diced
- 1/2 cup tomato, diced
- 1 avocado, diced
- 1 jalapeño, finely chopped (optional)
- 2 tbsp fresh cilantro, chopped
- Salt and pepper to taste
- Tortilla chips or saltine crackers, for serving
Instructions
- In a large bowl, combine tomato juice, ketchup, and lime juice. Mix well.
- Add shrimp, red onion, cucumber, tomato, jalapeño, and cilantro. Stir gently until coated.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes to let flavors meld.
- Before serving, gently fold in diced avocado.
- Serve cold with tortilla chips or crackers on the side.
